This image comes from a short series i have done called Burned, Bound and Bloodied. I had shot alot of variations of meats, seafood and vegetables on white formica for a food client over a nine day period in July 2013. The shoot was a bit tedious. Chunks, cubes, filets, steaks, sliced, diced, grilled, seared, sauteed, burned, torched and broiled meats. The shoot ended with a great sigh of relief and the food Stylist Suzanne Lenzer and i decided to 'break free' and create something for ourselves with the leftover meats. We had a beautiful piece of salmon leftover which was bound and tied. We were shooting in the Goodlight Studio in Manhattan which had a prop house next door. i ran around looking for a surface to put it on. I saw a sheet of chain-mail and thought it would be perfect with the salmon skin. I arranged the chain-mail several times to get nice texture and folds. This is with natural light. i had put two black cards vertically but separated towards the top of the shot with a small vertical opening to let just a little light in and create a vignetting on either side. i did not want any fill so i put a foam core black wall on the other side of the set. Still i got fill from the tall white ceilings. With food one needs to shoot quickly as all food has a 'shelf life' and meats tend to lose their color when exposed to air for too long. This is a digital photograph shot on a Canon 5D Mark3 & tripod at ISO 100 with an exposure of 1.3 seconds @ f11. It was shot raw and converted to a Tiff and is a 43.4 MB file.
